Ingredients to make Healthy Banana Chocolate Muffins
- Ripe bananas are crucial as the older the bananas are the more sweet they are
- Almond milk is my preferred milk, you can also use your preferred plant based milk or even whole milk
- Pure maple syrup is added for extra sweetness. I always recommend pure maple syrup that doesn't have any additional additives
- Coconut oil is my preferred oil for all of my baking. I like the subtle taste and also the health benefits, however if you don’t like coconut oil, you can substitute with your preferred oil
- Vanilla extract is added for extra flavour
- Egg I've used 1 egg in this recipe however you can make this dish completely vegan by replacing with a flax egg
- Rolled oats are used as the base. Once they are blended in a blender, this creates oat flour. You can also use whole wheat flour. If you are gluten intolorent, make sure to use gluten free rolled oats
- Baking powder is essential to help the muffins rise along with creating a fluffy texture
- Dark chocolate, I love adding 85% cacao and also prefer breaking them into small chunks for a rustic look. You can of course also use dark chocolate chips or your preferred chocolate type
How to make homemade Oat Flour
Making your own Oat Flour is so much easier than you think!
All you need to do is blend traditional rolled oats in a high-speed blender or food processor until it forms a nice fine flour consistency.
If you’re using a cup blender or small food processor, I’d suggest blending one cup at a time to ensure you aren’t left with clumps.
I love using oat flour for all of my baking recipes such as Banana Bread, Baked Oats, and even Pancakes.
1 cup of rolled oats blended creates just under 1 cup of oat flour.

Tips to make Banana Chocolate Chip Muffin Recipe
- Make sure to use ripe bananas in this recipe. The more brown and spottier they are the better! Similar to using them for Banana Bread, they will make the muffins more sweet and a nice soft texture
- When blending the rolled oats, you want it to be nice and fine to a flour consistency. I blend 1 cup at a time so that I can see there aren't any chunks of flour
- Using baking paper or cupcake liners will ensure the muffins don't get stuck in the tray. They're also much easier and quicker for clean up
- With any baking recipe, the cook time may require a minimal adjustment of either increasing or decreasing depending on your oven strength. They should be golden at the top.
Check they are cooked by sticking a toothpick inside, it should come out clean or with crumbs, but it shouldn't be wet
