Add almond milk, maple syrup, coconut oil, vanilla and the egg. Mix together until well combined
Pour rolled oats into a blender and blitz together to create a fine oat flourAdd this to the bowl along with the baking powder and mix together with a spoon
Break 40g of the dark chocolate into small chunks and add to the bowl (or simply add the dark chocolate chips in)
Place baking paper or cupcake liners in a muffin tin and evenly distribute the mixture. It will make 8 medium size muffins.
Add the remaining dark chocolate to the tops, and place in the oven to bake for about 25 minutes (when you can see they are nice and golden at the top)
Check they are cooked by sticking a toothpick inside, it should come out clean or with crumbs, but it shouldn't be wet
Remove from oven and allow muffins to cool for 5 minutes in the tray, then a further 5 minutes on a cooling rack. Then enjoy your fluffy Banana Chocolate Chip Muffins!
