    Oat Flour Pancakes

    You won't believe these delicious Oat Flour Pancakes are healthy and so easy to make. They're perfectly fluffy and made with wholesome ingredients to make you feel good from the inside out!

    If you love pancakes for breakfast but want a healthier alternative, then you’re in the right place! These oat flour pancakes tick all those boxes 🙂. They're light and airy, with the perfect fluffy texture, however made healthier and guilt free! The base is made with 5 simple ingredients with a couple of additions for extra flavor. You won't believe they're healthy because they taste that good, even kids will love them!

    Regular pancakes are made using plain all purpose flour, however here I've used classic rolled oats instead. Oats are nutritious as they're a whole grain filled with fiber, antioxidants, and can assist in reducing cholesterol levels along with many other health benefits. I actually prefer to use oat flour in all of my baking and other pancake recipes.

    You can of course purchase oat flour, however I like to make it myself which turns out much cheaper also. All you have to do is blend regular rolled oats in a food processor or blender and you will have perfect oat flour in 30 seconds! The addition of Greek yogurt gives the oat flour pancakes a softer inside with added protein and probiotics.

    You also don't have to eat oat flour pancakes only for breakfast. They make a great snack or even dessert. I like to make a double batch for meal prep which can also be frozen. That way they're ready to eat or quickly grab on the go! Some other meal prep ideas I make on repeat are lentil salad, zucchini fritters, and chickpea tuna salad.

    Ingredients and Substitutions

    • Oats are of course needed to make oat flour. It's best to use traditional rolled oats which are less processed than quick oats. You then grind the oats in a blender to make easy oat flour. If needed, you can also purchase certified gluten-free oats
    • Eggs are used to bind the ingredients together and also add to the fluffy texture. For an egg-free or vegan option, use a flaxseed egg or you can also use ½ a ripe banana mashed
    • Greek yogurt adds protein and moisture for a tender texture. You can also use dairy-free yogurt
    • Milk, any you like works here! I prefer dairy-free milk such as almond milk or oat milk but dairy milk is fine too
    • Baking powder is the leavening agent that creates those light and fluffy pancakes
    • Vanilla extract and cinnamon are optional but enhance the flavor and lovely aroma
    • Sweetener is optional, but I love to add honey or maple syrup. Brown sugar or agave work well too 
    • *Optional add ons such as mini chocolate chips, blueberries or other fresh berries make fun and extra yummy oatmeal pancakes that are truly irresistible!

    How to make Oat Flour Pancakes

    You'll be surprised how easy these Oat Flour Pancakes are to make. Follow my simple steps below.

    Blend rolled oats to make oat flour (for ~30 secs)

    Add an egg, milk, vanilla, greek yogurt and honey to a large bowl and whisk

    Add oat flour, baking powder and a pinch of salt. Mix until there are no clumps (don't over mix!)

    Optional step, add 1-2 tablespoons of mini choc chips and gently mix through

    Heat oil in a pan over medium heat. Add a ladle of the batter one at a time and shape with the back of a spoon if needed

    When some bubbles appear, flip using a spatula. Cook the second side for 1-2 minutes then remove. Repeat the last 2 steps until all batter has finished

    Tips and Tricks

    1. To make fine oat flour, shake the blender half way to ensure there are no oats left inside
    2. Don't over mix the batter as it can lead to tough pancakes. Gently mix until just combined
    3. Cook on medium heat to ensure pancakes cook evenly without burning and look for the bubbles as a clue on when to flip
    4. For even sized pancakes, pour the batter in a measuring cup when cooking the pancakes to make them the same size 
    5. Keep pancakes warm by putting the cooked pancakes on a wire rack and place in a preheated oven while you cook the rest of the batch

    Storage Instructions

    • Store pancakes in an airtight container in the fridge for up to 3-4 days
    • Reheat leftover pancakes in a toaster oven, microwave or a pan until heated through
    • You can freeze extra pancakes for meal prep! Place them in the freezer on a baking sheet or plate in a single layer then once frozen, transfer to a freezer bag. They'll keep for 2-3 months in the freezer!

    Are oat pancakes healthy?

    Yes! These oat flour pancakes are secretly healthy. Rolled oats are a wholegrain and unrefined unlike all purpose flour, they also contain nutrients and vitamins. The remaining ingredients are all wholesome ingredients that make these pancakes healthy

    What are the benefits of oat flour pancakes?

    Oat flour pancakes are high in fiber and many nutrients from the rolled oats which can lower cholesterol levels and can also regulate blood sugar

    Why do my oat pancakes fall apart?

    If your pancakes are falling apart, this means your batter is either too thin or you're flipping them too early. If the batter is too runny, add 1-2 more spoons of oat flour.

    To flip, look out for bubbles and lift one of corners of the pancakes to check they're lightly golden brown and ready to be flipped

    Oat Flour Pancakes (Fluffy Secretly Healthy)

    Ingredients 

    • 1 cup traditional rolled oats or oat flour
    • 1 large egg
    • ½ cup milk - I prefer non-dairy milks such as almond or oat milk
    • ¼ cup Greek yogurt
    • 2 teaspoons baking powder
    • 1-2 tablespoons coconut oil - or preferred oil/ butter for frying

    Add Ons (Recommended)

    • 1 tablespoon honey, maple syrup or sweetener
    • 1 teaspoon vanilla extract
    • ½ teaspoon cinnamon powder
    • *Optional mini chocolate chips
    • Serve with fresh fruit such as strawberries, bananas and maple syrup

    Instructions

    • Add the rolled oats to a blender and blend to make a fine oat flour, usually about 30 seconds. Give the blender a shake halfway to ensure there are no oats left inside
    • In a large bowl, add wet ingredients, being the egg, milk, greek yogurt, vanilla and honey. Whisk until smooth
    • Add dry ingredients to the bowl, being oat flour, baking powder and a pinch of salt. Gently mix through so there are no clumps, making sure not to over mix
    • *Optional, add 1-2 tablespoons of mini chocolate chips, and gently mix through the batter
    • Heat some oil on a large skillet or griddle over medium heat. Add a ladle of the pancake batter and shape with the back of a spoon if needed
      Add more of the pancake batter to the pan, making sure to leave room in between them for flipping
    • After a few minutes, when you start to see some bubbles, gently flip the pancakes using a spatula. You can also lift one of corners of the pancakes to check they're lightly golden brown and ready to be flipped
    • Cook the second side for 1-2 minutes then remove the first batch of pancakes. Add more oil to the pan and continue the last 2 steps for the remaining mixture
    • Serve up your delicious Oat Flour Pancakes with some fresh fruit and a drizzle of maple syrup and enjoy!

      Delicious. I swear by oat flour now for taste. But as a diabetic with a sweet tooth these are right up my alley. I can eat them plain with just a wee bit of butter. So happy. I'll definitely be trying other recipes in your catalog. Thank you.
