You won't believe these delicious Oat Flour Pancakes are healthy and so easy to make. Perfectly fluffy and made with wholesome ingredients to make you feel good from the inside out!
½cupmilk - I prefer non-dairy milks such as almond or oat milk
¼cupGreek yogurt
2teaspoons baking powder
1-2tablespoonscoconut oil - or preferred oil/ butter for frying
Add Ons (Recommended)
1tablespoonhoney, maple syrup or sweetener
1teaspoonvanilla extract
½teaspooncinnamon powder
*Optional mini chocolate chips
Serve with fresh fruit such as strawberries, bananas and maple syrup
Instructions
Add the rolled oats to a blender and blend to make a fine oat flour, usually about 30 seconds. Give the blender a shake halfway to ensure there are no oats left inside
In a large bowl, add wet ingredients, being the egg, milk, greek yogurt, vanilla and honey. Whisk until smooth
Add dry ingredients to the bowl, being oat flour, baking powder and a pinch of salt. Gently mix through so there are no clumps, making sure not to over mix
*Optional, add 1-2 tablespoons of mini chocolate chips, and gently mix through the batter
Heat some oil on a large skillet or griddle over medium heat. Add a ladle of the pancake batter and shape with the back of a spoon if neededAdd more of the pancake batter to the pan, making sure to leave room in between them for flipping
After a few minutes, when you start to see some bubbles, gently flip the pancakes using a spatula. You can also lift one of corners of the pancakes to check they're lightly golden brown and ready to be flipped
Cook the second side for 1-2 minutes then remove the first batch of pancakes. Add more oil to the pan and continue the last 2 steps for the remaining mixture
Serve up your delicious Oat Flour Pancakes with some fresh fruit and a drizzle of maple syrup and enjoy!
