    Dumpling Soup

    This Dumpling Soup recipe has become a new family favorite. It has a flavorful broth made with shiitake mushrooms and is packed of umami flavors. It's the perfect comfort in less than 30 minutes!

    Nothing warms you up better on a cold night than a big bowl of comfort food and this is the perfect dish! It’s packed with umami flavors and different textures from the shiitake mushrooms, vegetables and of course the dumplings. The best part is that the dumplings become filled with the beautiful shiitake broth and burst in your mouth when eating them…yum!!

    This Dumpling Soup is made with frozen dumplings, making it a quick recipe ready in less than 30 minutes. It's also great for a last minute dish because you can really add any veggies you have in your fridge. I've made this dumpling soup recipe vegan as I've used vegetable dumplings, but you can really add any dumplings or wontons you like.

    If you love dumplings as much as I do, you must try my rice paper dumplings dipped into the perfect dipping sauce or the viral one pan dumpling bake!

    The broth for the dumpling soup is made with wholesome ingredients to make you feel good from the inside out. Its made with sauteed onions, garlic and ginger and a mix of shiitake and enoki mushrooms. The greens are added for the final touch making it a nutritious meal.

    I absolutely love Asian food and soups, so I find this recipe a great DIY option at home that anyone can make. Why buy take out when you can remake it so easily yourself! Its healthier, cheaper and takes no time at all. This shiitake mushroom soup with dumplings will become a new family favorite!

    Some other of my favorite Asian inspired recipes to try are my spicy tuna crispy rice, teriyaki tofu and kani salad.

    Why you'll love this recipe

    Ingredients and Substitutions

    • Dumplings are the star of the soup which soak in that delicious broth. You can add your favourite filled dumplings or wontons. I usually prefer vegetable frozen potstickers / dumplings which also make the soup vegan. I also like adding shrimp dumplings occasionally too
    • Onion, garlic and ginger are the foundation of the broth. All sautéed in olive oil as the first step to bring out their flavours and become the base of the soup
    • Shiitake mushrooms are the secret star of the soup. They have such a beautiful umami flavour and meaty texture which stays so prominent in the dish. You can substitute baby portobello mushroom or cremini mushrooms if needed
    • Vegetable broth is my preferred stock. I also prefer a salt reduced organic brand which is lower in sodium. You can of course use chicken broth if you aren't vegan
    • Sesame oil is added to the mushrooms for its flavor and scent. You only need to add a small amount as a little goes a long way
    • Soy sauce is added to bring in salty umami depth. I always prefer salt reduced soy sauce. Tamari is a great gluten-free option or miso paste
    • Baby bok choy adds many nutrients to the soup along with a pop of green color. Add them in the final minutes so they don't overcook. Spinach, Swiss chard or kale work great too. Other veggies such as carrots and celery can be added
    • Enoki mushrooms look like long thin strings, similar to noodles. They’re light and chewy and taste great in Asian soups

    How to make Dumpling Soup

    This makes for the perfect comfort food with delicious umami flavors. Follow my simple steps below.

    Steps on how to make Dumpling Soup
    1. Sauté diced onions in olive oil until translucent over medium heat
    2. Add garlic and ginger and sauté for a few minutes
    3. Add shiitake mushrooms and once browned add sesame oil, red pepper flakes and season with S&P. Sauté for a few minutes
    4. Add vegetable broth, 3 cups of water and soy sauce. Once it boils, reduce to low heat, put the lid on for 15 minutes
    5. Add bok choy, enoki mushrooms and dumplings to the pot
    6. Simmer until the dumplings are cooked (as per the package instructions, typically 2-3 minutes). It's ready, enjoy!

    Tips and Tricks

    1. Ensure to sauté the onion, garlic and ginger as the first step to bring out their aromatics and flavors
    2. When sautéing the shiitake mushrooms, don’t add salt until they have browned as it can create too much moisture and can become watery
    3. Only add the bok choy or enoki mushrooms at the final stages, as they only need a few minutes to cook. You don’t want them to be overcooked and mushy
    4. Don't overcook the dumplings as they can pop open. All dumplings have different cooking times but they shouldn’t need more than a few minutes
    5. Garnish for extra flavor. Top your soup with chopped scallions, sesame seeds, or a drizzle of chili oil or chilli sauce such as sriracha or chili crisp

    Storage Instructions

    • Store leftover dumpling soup in an airtight container in the refrigerator for up to 3-4 days
    • Reheat gently on the stovetop over medium heat until simmering and heated through. You can also microwave until heated through
    • You can also freeze the soup, but the dumplings may become a bit mushy upon defrosting and reheating. I’d recommend to cook the dumplings on the day the soup will be eaten

    What is dumpling soup made of?

    Typically it's made with a flavorful broth with vegetables, seasoned with soy sauce, sesame oil and the dumplings or wontons of choice. I've also added shiitake mushrooms for a deep umami flavor to make a shiitake mushroom soup base 

    What kind of dumplings should I use?

    Any kind you like! I’ve used frozen vegetable dumplings to make a vegan recipe but feel free to use shrimp, chicken or pork dumplings

    What can I serve with this soup?

    This soup is hearty enough to be a meal on its own. You can also serve it with rice or noodles such as udon noodles with added protein such as tofu

    Ingredients 

    • 12-16 dumplings- I've used frozen veggie dumplings
    • 11oz / 300g shiitake mushrooms - sliced
    • 5oz / 140g enoki mushrooms
    • 1 brown onion - diced
    • 4 garlic cloves - diced
    • ½ inch cube fresh ginger - diced
    • 1 tablespoon sesame oil
    • 4 cups vegetable broth - I've used low sodium
    • 2 tablespoons soy sauce - I've used low sodium
    • 3 cups water
    • 3 baby bok choy
    • 1 teaspoon red pepper flakes (optional)
    • 1 tablespoon olive oil
    • Salt and black pepper to taste

    Garnish

    • Sliced green onions/scallions
    • Extra soy sauce, chili oil or sriracha sauce (optional) 

    Instructions

    • In a large pot, sauté the onions in olive oil until translucent over a medium heat. Then add the garlic and ginger and stir together for a few minutes
    • Add shiitake mushrooms to the pot, once they start to brown, add sesame oil, and a pinch of salt and black pepper. Sauté for a few minutes
    • Pour in the vegetable broth and 3 cups of water.
      Add soy sauce and once it starts to boil, reduce the heat to low and simmer with the lid on for 10 minutes
    • Chop the very bottom off the baby bok choy stalks and separate the leaves from eachother. Add them all to the pot along with enoki mushrooms and dumplings
    • Simmer until dumplings are cooked as per package instructions (usually 2-3 minutes) and it's ready!
      Serve your delicious dumpling soup in bowls topped with sliced green onions. You can also add some extra soy sauce, chili oil or sriracha and enjoy 🙂

        Hey there! This looks amazing.... which soy sauce would you recommend for this ? (Dark/light/tamari, amoy or some other brand?) i am not sure why but i use amoy’s light soy sauce and it always makes my food raste a bit sweet :/

            This is really good. The siricha sauce really finishes this off.. so definitely don't leave that out!
            I couldn't find the enoki mushrooms, but still wanted to add something so i used bean sprouts. Really good, warming soup! Hoping to use the enoki next time!

      Honestly my favourite quick meal of all times! I usually eat it with fried tofu on top instead of dumplings and is so delicious!
      Definitely added to mu top favourite meals at the moment, even my boyfriend who didn’t love this kind of food a lot is now a big fan of it and wants it all the time highly recommend trying.

      Love this recipe, I used 50g of re hydrated shiitake mushrooms and 20g of re hydrated chanterelle mushrooms. Also made my own dumplings using a common recipe. I do not bother with the bok choy, enoki mushrooms or garnishes... so much easier. Thank you for the basic principle!

      Delicious! I added sliced carrots because I had some left over from a previous dish and they were going to go bad soon and they tasted great in this dish. I also did mushroom broth instead of water because I like big flavor! It was amazing, I don’t normally like bok choy but I ate all of it!

      Question though… what kind of chili do you recommend? And why type of preparation? My grocery store didn’t have any right now so I used chili crisp oil but it didn’t have quite the effect I wanted. I ended up dressing with some sriracha.

      This was a wonderful cold rainy wintery day soup for us. And, surprise to me, my protein loving husband loved it too. The mushrooms are very satisfying as a meat replacement. We were short on asian mushrooms, so had to add button mushrooms, but it was still great. Thank you for the fantastic recipe.

      This is the best mushroom soup I've ever made. I added GF ramen noodles at the end instead of the dumplings to make it gluten free and I was so happy with the result. Thank you thank you!! I now love Shiitake mushrooms!

      First time having and making this kind of dish...we opted for mushroom stuffed dumplings. WoW!! My husband is a true carnivore but he was so impressed with this dish!! Hearty and comforting. It's winter here in Cape Town South Africa and this just hit the spot.

      I used a bit more stock than called for - also I ran out of baby bok choy so I used some thinly sliced cabbage. We love dumplings so I added a third more than required... love this recipe!
