Yogurt Flatbread

This 2 ingredient Yogurt Flatbread recipe is a gamechanger! It's healthy, high in protein and doesn't require any yeast. You'll get soft delicious pita bread perfect for making wraps and dipping into your favorite dips…yum!

Trust me when I say, there's nothing better than making your own bread. This yogurt flatbread is so easy to make with 2 ingredients and doesn't need any yeast! I love making them for a quick lunch or dinner as they’re so versatile and can be used in so many different ways. This is an easy cheat method to make pita bread, except the secret ingredient is Greek yogurt!  

I love memories of traveling to Greece where I ate fresh pita bread everyday and didn't get sick of it! Ways in which you can use this flatbread are of course to make wraps or a gyros filled with your favorite fillings, like my veggie Greek wrap. But it doesn't end there…you can also make flatbread pizza or serve the flatbread with a mezze table and use it for dipping. Some dips include a delicious hummus, whipped feta dip or tirokafteri to keep it Greek style 🙂 

Greek yogurt is not only healthy as its high in protein, calcium and probiotics, but it's the secret weapon to creating soft chewy flatbread and other dough recipes. The second ingredient is self-raising flour which has a leavening agent so you won't need any yeast or long kneading and resting times.

For meal prep, I love to make a double batch of this recipe, freeze it and defrost when I want to eat them or when I need a quick meal ready in no time. They taste just as fresh 😊. More homemade bread recipes to try are my easy no knead focaccia and barbari bread which is Persian flatbread.

I also use this same dough to make different variations such as protein bagels, naan and even protein pizza. Don't worry, you can't taste the flavor of the yogurt!

Ingredients and Substitutions

  • Greek yogurt is the base of our simple 2 ingredient dough. It makes the dough soft and chewy and moist in the best way. Always use plain Greek yogurt which isn’t flavored. It can be full fat or non fat - I’ve used non-fat yogurt in my recipe
  • Self-raising flour is the handy flour which already has a leaving agent to help the flatbread rise without any yeast. If you don't have self-raising flour, don't worry as you can use all-purpose flour with a teaspoon of baking powder added
  • Salt and extra virgin olive oil are optional and added for more flavor and for cooking. You can also add them as toppings along with herbs, minced garlic or even melted butter, but I'm an olive oil girl all the way ☺️

How to make Yogurt Flatbread

This yogurt flatbread uses 2 ingredients and is easy to make. Follow my simple steps below.

Flour in a bowl

Add self raising flour to a large bowl, a pinch of salt and stir through

Yogurt and flour mixed into a rough dough

Add yogurt, combine with a wooden spoon then use one hand and mix in the bowl until it forms a rough ball (as pictured)

Place dough on a clean lightly floured surface and knead for 3-5 minutes. If too sticky or wet, sprinkle lightly with flour as needed

Dough should be smooth. Leave to rest for 10 minutes

Cut dough into 4 equal pieces and roll them into balls

Dust your surface with flour. Use a rolling pin to create a flat circle shape, one ball at a time (approx 16-18 cms / 6-7 inches)

Heat a pan over medium-high heat, spray olive oil (or lightly brush with oil). Add one piece and cook for 2-3 minutes until some bubbles appear

Flip and cook the second side for 1-2 minutes and its ready! Repeat for remaining pieces

Tips and Tricks

  1. Ensure to flour your clean work surface, as this dusting of flour will prevent the dough from sticking while rolling and kneading
  2. If the dough seems too wet or sticky, keep sprinkling with flour as needed. Every yogurt brand will have different consistencies
  3. Heat the pan to medium heat before adding the flattened pieces of dough to ensure they cook evenly and get those lovely puffed bubbles
  4. Keep the cooked flatbread warm by covering with aluminium foil or a clean kitchen towel while cooking the rest
  5. The possibilities and toppings are endless! Try adding herbs such as parsley and oregano, minced garlic or cheese

Storage Instructions

  • Store leftover flatbreads in an airtight container or zip lock bag in the fridge for up to 3 days
  • Reheat in the microwave or in a frying pan over stove top for a few minutes until heated through
  • For longer storage as meal prep, you can freeze them for up to 2 months. Freeze them separately on a baking sheet and once frozen, place in a zip lock bag in the freezer. Thaw or reheat from frozen in a pan or oven until warmed through

FAQs

What does yogurt do to bread dough?

The yogurt adds moisture and softens the end result of the bread. It also replaces the water in this flatbread recipe

Why is my dough sticky?

Every yogurt has different moisture consistencies, so when making any type of dough, slowly add flour as needed until you have the right texture

What kind of yogurt should I use?

Plain greek yogurt which isn’t flavored or sweetened. You can use full fat or non-fat greek yogurt

Easy pita bread made from yogurt

Ingredients 

  • ¾ cup plain Greek yogurt - I’ve used non fat
  • 1 cup self raising flour (or plain all purpose flour)
  • 1 teaspoon baking powder (only add if using all purpose flour)
  • Pinch of salt
  • Olive oil spray for cooking

Instructions

  • In a large bowl, add the flour and stir through a pinch of salt. *If using plain all purpose flour, also add in the baking powder
  • Add the yogurt and stir together with a wooden spoon. Then using one hand mix together in the bowl until it forms one rough ball
  • Transfer dough to a clean lightly floured surface/table. Knead with your hands for 3-5 minutes until you achieve a smooth ball. *If it's too sticky or wet, sprinkle lightly with flour as needed
    Allow the dough to rest for 10 minutes
  • Cut the dough into 4 equal pieces and roll them into balls
  • Dust the table with flour, using a rolling pin flatten the dough to create a flat circle shape approx 16-18cms / 6-7inches. *Remember to keep sprinkling flour on the dough and flip it upside down whilst rolling it flat
    Continue this step with remaining dough balls
  • Heat a pan over medium-high heat and add a few sprays of olive oil spray (or lightly brush with oil). Add one dough and cook for 2-3 minutes until you start to see some bubbles appear
  • Lift one of the corners and once golden brown, gently flip using a spatula. Cook the second side for 1-2 minutes. Once it puffs up and golden, its ready!
  • Transfer the flatbread to a plate and continue the above step for the remaining pieces. To keep them warm, cover with a clean kitchen towel or aluminium foil
    Enjoy your deliciously soft Yogurt Flatbread for dipping into favorite dips like hummus, whipped feta or make a wrap such as my Greek wrap…yum!

      Add a teaspoon of baking powder to regular flour. I haven't tried it with chickpea flour sorry, but you can give it a shot 🙂

    I really enjoyed how easy this recipe is. I added a measured "pinch" of salt from a set of measuring spoons. But it wasn't nearly enough, for me anyway. When I make these again I'll double it to 1/8th of a teaspoon.

    Delish and easy!
    I added chopped garlic to the flour/yogurt mix then cooked lightly in fry pan and when ready to eat I add tomato sauce, cheese, and whatever toppings I want: Blk olives, Sundried tomatoes and spinach are my favorite!

    These were amazing!! Puffy and delicious and, from start to finish, they only took about 30 minutes. (Where has this recipe been all my life?!)
    I served them with lamb burgers (made oblong to fit onto the bread better) with Greek seasonings, red onion, stuffed with goat cheese; and a tzatziki style cucumber salad.
    This was one of the best meals I've ever made and the flatbread is what put it over the top.
    The flavor of the bread is mild enough to go with anything. I had some with jam for dessert and I look forward to making pizza with them. Thanks!

    Made these today with the Greek style yogurt I also just made in my Instant Pot a few days ago. I found I had to add a bit more flour, so possibly an additional 1/8th of a cup, but once I got the dough smooth and not sticky, it was easy to work with. Cooked up quicker than expected and tasted great! Couldn't be much easier!

    So easy and they turned out amazing! I didn’t roll the first one thin enough so it was a bit dense and chewy but still delicious. I will be making these all the time now!

    ABSOLUTELY PHENOMENAL! I made these for dinner with my bf for Greek gyros! It was a fun activity to do together and the fresh bread was so delicious! I don't think I will ever buy flatbread from the store ever again. Thank you!

      I haven't tested it myself Debbie but I dont think there will be any issues, you may need to add less flour when kneading. Would love to hear how it goes!
