Roasted Chickpeas

These crispy Roasted Chickpeas are crunchy, flavorful and the best healthy snack. Coated in a delicious spice rub, you can bake them in the oven or air fryer and add them to salads, Mediterranean bowls or enjoy on their own. Warning they are super addictive!

These Roasted Chickpeas have been a family favorite recipe for years! I first posted the recipe back in 2021 and it's still one I make on repeat. If you've never tried them before, they are crunchy little bites of heaven coated in a delicious spice rub which gives them so much flavor. There's only one problem thoughโ€ฆonce you have one, you cant stop!

Not only are these crispy chickpeas delicious, they're also super healthy and packed with protein and fiber. Theyโ€™re made with minimal oil and can be cooked in the oven or air fryer. I love making them as a healthier snack for movie night or when I need something to tie me over from lunch to dinner. I also love adding them to salads for some crunch like my tahini kale salad and on protein bowls like my Mediterranean bowl. You can even add them to soups like this delicious Turkish lentil soup.

I eat a mostly vegetarian diet so beans and legumes make a high percentage of my diet. Out of all of them, I have to say I eat chickpeas the most and always have a few cans in my pantry at all times. They're nutritious and super versatile and can be added to so many dishes.

Some favorites I make all the time are marry me chickpeas, hummus and even chickpea tunaโ€ฆyep tuna ๐Ÿ˜‰. The list goes on for the humble little legume and these roasted chickpeas are another one to keep on the list.

What makes this recipe special

  • Crunchy & Delicious: They bake up perfectly crisp every time and are so addictive! 
  • Quick & Easy: Just dry them, toss in the spice rub and roast in the oven or air fryer
  • Nutritious: Packed with protein, fiber and nutrients from these little legumes
  • Customizable: Switch up the spices for different flavor combinations, you can even add cinnamon and sugar for a sweet snack 

Ingredients and Substitutions

  • Chickpeas are the star today and are also known as garbanzo beans. You can use canned chickpeas, just be sure to drain and dry them well. If using dried chickpeas, soak overnight and boil them first before roasting
  • Extra virgin olive oil helps the spices stick and help you achieve a crispy texture. You can substitute with avocado oil or your preferred oil
  • Smoked paprika adds a lovely red color and smoky depth. Sweet paprika can be substituted too
  • Cumin and garlic powder add warmth and earthiness to the spice blend, you can substitute with onion powder too. If you like it spicy, feel free to add chili powder, cayenne pepper or even some curry powder

How to make Roasted Chickpeas

Warning these crispy chickpeas are addictive! Here's how to make using an air fryer or oven. Follow my simple steps below (note quantities are listed in the recipe card below)

Step 1: Pat chickpeas dry with a kitchen towel, removing any loose skins

Step 2: Add to a bowl with all ingredients and mix to coat

Chickpeas cooked in the air fryer method

Step 3 (Air Fryer Method): Preheat at 350ยฐF (180ยฐC) and cook for 11 minutes. If not crispy, cook 1 minute more and check again โ€” they burn fast. Turn off heat and let it rest in the air fryer for 5 minutes

Step 4 (Oven Method): Bake at 425ยฐF (220ยฐC) for 18โ€“20 minutes. Shake tray at the 10-minute mark. Once ready, turn off heat and let rest in the oven for 5 minutes. Let chickpeas cool on the tray for 5โ€“10 minutes to crisp up fully. Enjoy!

Tips and Tricks

  • Ensure to dry the chickpeas thoroughly - use a paper towel or kitchen tea towels. This will remove the moisture and help them become super crispy
  • Keep the chickpea liquid (aquafaba) for use in different recipes
  • For the oven method, spread chickpeas out on the pan to help them roast evenly and toss them half way
  • Watch closely as all ovens and air fryers vary, so ensure to check the chickpeas to avoid burning
  • For the perfect crisp everytime, turn the oven / air fryer off and let them rest inside for 5 minutes

Storage Instructions

  • Store leftovers in an airtight container or jar at room temperature for up to 4 days
  • Reheat in the oven or air fryer for a few minutes to revive the crispiness
  • I don't recommend freezing this recipe

  • Mediterranean bowl
  • Greek bowl or other power bowls
  • Hummus, red pepper hummus or other dips 
  • Turkish soup, barley soup or other soups
  • Fattoush salad, quinoa salad or other salads 
  • Cauliflower steaks
  • Falafel wrap or Greek wrap
  • Roasted squash

FAQs

Are roasted chickpeas healthy?

Yes they sure are! Chickpeas are packed with protein and fiber and roasting them gets them super crispy for a great healthy snack

Why are my roasted chickpeas not crunchy?

They could have too much moisture in them. Once drained, ensure to dry them thoroughly in between a kitchen towel or paper towels before adding the seasoning and roasting

How to get chickpeas really crispy?

Once roasted, turn off the heat and leave them in the oven or air fryer for 5 minutes. This helps them dry out and become even more crispy

Can I use different spices?

Definitely! Some other spices to try are onion powder, curry powder, sumac, zaatar or cayenne pepper for some heat. You can also add sugar and cinnamon for a sweet twist

Ingredients 

  • 1 can (15oz / 430g) chickpeas/garbanzo beans - drained
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon ground cumin
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon salt and pinch of black pepper

Instructions

  • Drain and dry chickpeas thoroughly in between a kitchen towel, picking out any loose skins
  • Add them to a bowl with all remaining ingredients and stir to coat all the chickpeas

Air Fryer

  • Preheat air fryer to 400ยฐF/200ยฐC. Add the chickpeas, spreading to a single layer and air fry for for 10-12 minutes - shaking half way.
    Check the chickpeas, if they aren't crispy enough cook for an extra minute or so
  • Turn off the air fryer and let them rest inside for 5 minutes to help them dry out more and become extra crispy

Oven

  • Pre-heat oven to 425ยฐF/ 220ยฐC. Place chickpeas on a baking sheet lined with parchment paper, spreading them out to a single layer
    Bake for 18-20 minutes, stirring them half way. Check the chickpeas, if they aren't crispy enough cook for an extra minute or so
  • Once ready, turn the heat off and let them rest in the oven for 5 minutes to help them dry out more and become extra crispy
  • Enjoy your delicious Roasted Chickpeas as a healthy snack or add them to salads or Mediterranean bowl or soups

    I LOVE THIS RECIPE! It tastes so good that I could eat a whole batch by myself. I've stopped making it because I've unfortunately learned that chickpeas and my body do not mix well (i.e., I get super bloated and gassy), which I wish wasn't the case. For everyone else who can tolerate this food, I highly recommend! It's a great snack.

    So I made these in the oven and I thought I dried them properly. They started to pop on me! I took them out, let them rest, then returned them and cooked again. So yummy, but funny how they started shooting at me.
