You may have eaten an egg scramble, frittata or shakshuka with feta cheese in the past but this concept is totally different. By crumbling the feta straight on the hot pan, it creates a beautiful crispy golden crust...YUM!!!!

It's no wonder these crispy feta eggs have come so viral! I was drooling when I first saw the videos floating across social media and couldn't wait to try them myself. I'm personally not a huge fan of eggs, but this dish has changed my mind! I've had it 3 times this week thanks to Grace Elkus for sharing this fun egg recipe.

Ingredients to make Crispy Feta Fried Eggs
- Feta Cheese…well you of course need feta to make feta fried eggs 🙂 I find it's always best to use a block of feta cheese rather than already crumbled feta.
You can also use dairy free feta or even goat cheese would also be an amazing substitute. I would however recommend to add salt if you are using goats cheese - Large eggs, I always prefer to use organic free range eggs. They do cost a little more, but they are much nicer in taste
- Dried oregano is a match made in heaven with feta cheese! You can use other herbs such as parsley, basil or dill
- Red pepper flakes are added for a little spice but its totally optional
- Tortilla, a small tortilla or slice of toasted bread is the base of the feta fried eggs. Choose your preferred bread or you can even enjoy it on its own
- Avocado is smashed over the tortilla or toast and is the perfect combination with a squeeze of lemon juice or lime juice. The acidity works so well with the salty eggs and feta. You can of course add other vegetables such as baby spinach, mushrooms or tomatoes as the base
- Garnish with pickled onions which are super easy to make and provide a yummy fresh tang! I've also added a drizzle of chilli oil or hot sauce but this is totally optional. You can also garnish with fresh herbs such as chives or green onions
How to make Crispy Feta Fried Eggs
Level up your eggs with this feta fried eggs recipe. It's so easy to make and packs a punch of flavour. Here are my simple steps below.
- In a small fry pan add some oil and crumble over feta cheese on the outside of the pan (as pictured). Sauté over medium heat for a couple of minutes
- Gently crack the egg in the center of the pan
- Season with a sprinkle of dried oregano and red pepper flakes and allow the egg to cook to your liking
- Warm a small tortilla on a gas stove, oven or in the microwave
- Smash avocado on top of the tortilla with a squeeze of lemon juice
- When the egg is cooked, place on the tortilla and garnish with pickled onions, a drizzle of chili oil and enjoy!
Tips and Tricks
- Good quality feta cheese will make this dish even better!
- Ensure to use a non stick pan as the feta cheese will stick to a stainless steel pan
- Saute the feta cheese over medium heat and keep your eye on it. You don't want it to burn over a high heat
- Remove the cooked feta eggs off the pan straight away as the cheese will start to crispen up as it cools down
- You can add a lid to the pan if you prefer the eggs cooked to a medium or hard texture
Storage and Reheating
- Crispy feta eggs will taste the best if they are eaten straight away. Also the longer it will cool down, the crispy crust will slowly soften up
- You can however store any leftovers in an airtight container in the refrigerator for 2-3 days. Enjoy cold or reheat in a pan or the microwave for a few minutes. The texture however won't be the same and the egg can overcook
- I wouldn't recommend freezing the feta eggs
FAQs
Yes of course! Goat cheese would be another amazing cheese. Parmigiano Reggiano or Pecorino would also give you the crust but without the same creaminess
Feta cheese is quite salty so the above addition of fresh avocado, lemon juice and red pepper flakes and pickled onions give a lovely balance.
Other fresh vegetables such as cucumbers and tomatoes or a salad are also a match made
Yes this recipe sure is! It's vegetarian friendly however it's not vegan due to the eggs and feta cheese
You can store any leftovers in an airtight container in the refrigerator for 2-3 days but I would recommend eating it straight away for the ultimate taste

Ingredients
- 1 large egg
- 20 grams feta cheese
- 1 small tortilla or slice of toasted bread
- ¼ avocado
- Dried oregano
- Red pepper flakes
- Cooking oil spray or olive oil spray
- Lemon juice
- Garnish with pickled onions and chili oil
Instructions
- In a small fry pan or skillet, add a spray of cooking oil and crumble over the feta cheese, ensuring the outside circle of the pan is also covered
- Allow the feta cheese to sizzle and sauté over a medium heat for a couple of minutes so the cheese can melt without burning. Gently crack the egg in the center of the pan
- Season the egg with a sprinkle of dried oregano and red pepper flakes and allow the egg to cook to your liking (whether that's medium or with a runny yolk)
- Warm the tortilla on a gas stove, oven or in the microwave. Smash the avocado on top of the tortilla and add a squeeze of lemon juice
- When the egg is cooked and the cheese has created a golden brown crust, gently remove from the pan using a spatula and place on the tortillaGarnish with Pickled Onions, a drizzle of chili oil and enjoy your Crispy Feta Fried Eggs!

Love this! One challenge for me, however, has been to attain this crispy golden brown feta cheese finish. What brand (I have tried the block and crumbled) do you recommend to get this golden brown? Also, are you using medium heat throughout the entire process? I just want to get it 100% right, as you have done here. 🙂 Thanks!

So happy you love this recipe Alan! I always use blocked feta, and then crumble it in myself. The better quality creamy feta is best. Yes, medium heat all the way, and make sure the pan is hot before adding the cheese 🙂
