    Chopped Italian Sandwich

    JUMP TO RECIPE

This viral Chopped Italian Sandwich is an absolute flavor bomb! It's your favorite ingredients of an Italian sub sandwich, chopped into bite sized pieces so you get a little taste of everything in every bite. Trust me, run and make it!

Chopped Italian Sandwich on a cutting board

If you haven't tried the viral Chopped Italian Sandwich, you've been missing out! You know I love to try a Tiktok trend, and this one was definitely worth the hype! It's basically a fully loaded Italian sub sandwich, chopped into small pieces and dressed to perfection, before filling up a bread roll. With each mouthful you can literally taste all the ingredients in one!

Some other Tiktok viral trends to try are my parmesan potatoes, crispy feta eggs and tortilla wrap hack.

The fun part is, you pile all the ingredients on a cutting board, grab a sharp knife and get chopping! You then add the Italian salad dressing on top, mix it all up, and your filling is ready to scoop into a sub roll and dig in! Its messy but in the best way possible hehe. Some other delicious sandwiches to check out are my chickpea tuna and falafel wrap.

Usually, a classic Italian sub and grinders include deli meats, but here I've made a vegetarian version. Don't worry, its full of flavor that you wont miss the meat! I best describe it as an antipasto sandwich because it has all of the classics you would find on an antipasto platter or these cute antipasto skewers. Since I'm not using any meat, I've added 3 different cheeses, a mix of marinated and fresh vegetables with a tangy dressing….Yum!

There really aren't any rules when making your chopped Italian sandwich. Get creative and make it with fancy or simple ingredients. I've used a long ciabatta roll to feed 2 or even 3 people, but you can also make individual Italian subs. You can easily make it low carb and skip the bread completely, and make it an Italian chopped salad ☺️

    Ingredients and Substitutions

    • Bread roll, I've used a large ciabatta roll, but you can substitute with your favorite bread such as focaccia, french bread, hoagie or sub rolls used in classic grinder sandwiches
    • Cheeses, I’ve added a trio of Italian cheeses being classic provolone slices which have a mild flavor, fresh mozzarella that adds a creamy element and grated parmesan cheese for a salty umami flavor. Swiss cheese or cheddar work great too
    • Shredded lettuce provides a refreshing crunch, I prefer Iceberg or romaine lettuce
    • Roma tomato also known as an Italian tomato are juicy and fresh. Feel free to use any type of tomato you like
    • Red onion adds a bit of bite, you can skip it if you prefer a milder flavor
    • Sundried tomatoes bring more saltiness and pops of flavor. Olives can be substituted
    • Marinated roasted red peppers are smoky, tangy and sweet all in one. You can also add banana peppers / pepperoncini peppers for a touch of heat
    • Marinated artichoke hearts are briny and delicious and a personal favorite
    • Dressing is made with whole egg mayonnaise, red wine vinegar, olive oil, oregano, salt, and pepper with a light drizzle of olive oil. I prefer it without garlic, but you can also grate in one clove
    • **If you aren't vegetarian, feel free to add your favorite cold cuts such as mortadella, salami, ham, pepperoni or chicken/turkey

    Tips and Tricks

    1. Use good quality ingredients. A key factor as to why Italian sandwiches taste so good is the high quality of the filling
    2. Use a sharp knife to ensure all the ingredients are chopped into even pieces
    3. Don't skip the dressing, the creamy Italian dressing binds everything together and tastes so good!
    4. Add the mayo dressing right before serving. As the ingredients are finely chopped, they will absorb the dressing quickly and can go soft and mushy if left
    5. Make it low carb by following the recipe, but then skip the bread and serve in a large mixing bowl as an Italian grinder salad
    6. Customize to 'your' taste buds or dietary requirement by making it vegan, vegetarian or for the meat lovers too. Thats the beauty of this sandwich!

    Storage Instructions

    • This chopped Italian sandwich is best enjoyed fresh as the mixture can lose its crunch and the bread can go soggy if not eaten the same day
    • You can however make the chopped mixture and dressing separately in advance, and store in an airtight container in the refrigerator for up to 2 days. Then serve fresh on the bread when you’re ready to enjoy it

    Ingredients

    • 1 large ciabatta bread roll - or 2 smaller ciabatta rolls or hoagie rolls
    • 4 slices provolone cheese
    • 3.5oz / 100g fresh mozzarella ball
    • 1 tablespoon freshly grated parmesan cheese
    • ¼ small iceberg lettuce
    • 1 roma tomato
    • ¼ small red onion
    • 4 pieces sun-dried tomatoes
    • 1.5oz/ 45g marinated roasted peppers
    • 4 quarters marinated artichoke hearts
    • 4 basil leaves
    • *Optional - banana peppers / pepperoncini peppers

    Italian Dressing

    • 2 tablespoons whole egg mayonnaise
    • 1 teaspoon red wine vinegar
    • 1 teaspoon extra virgin olive oil
    • ½ teaspoon dried oregano or Italian seasoning
    • Salt and black pepper to taste

    Instructions

    • Slice the tomato and red onion into thin slices. Slice the mozzarella ball into circles and place over a paper towel to remove the excess water
    • On a large chopping board, place down the iceberg lettuce and pile the following on top - tomato slices, provolone cheese, red onion, mozzarella, sun dried tomatoes, marinated peppers, artichokes and basil leaves
    • Using a sharp knife, chop all the ingredients into small pieces
    • Once the ingredients are chopped, add the dressing directly on top - mayonnaise, red wine vinegar, oregano, grated parmesan cheese, season with salt and pepper and drizzle of olive oil
    • Using your knife or a spoon, mix the dressing into the ingredients by folding the mixture through so its all nicely coated
    • Slice the bread roll in half lengthways, then scoop the filling into the bread. I like to place the bottom half of the bread directly on top of the filling, then using a knife scoop it into the bread
Serve up your jam packed Chopped Italian Sandwich and dig in!!

My family was coming to visit and they were flying to Chicago. Not knowing exactly when they would arrive mid/late evening I prepared this sandwich earlier in the day for a lightish dinner and just toasted the ciabatta when they texted the time of their arrival. Everyone enjoyed it and even my 6 yr old picky twin nieces had seconds. This sandwich also makes an excellent salad. I was so impressed with the mouthwatering flavors that I have since just made it as a salad accompanied with a baguette. If you keep the salad undressed, it saves for a couple of days. Great addition to my repertoire for a yummy quick meal! I have really enjoyed Ayeh's recipes! So delicious!!!
