In a small bowl, add the sauce ingredients which are the honey, soy sauce, vinegar, chopped garlic, water and red pepper flakes (if using). Whisk to combine
Season the salmon fillets with a pinch of salt and black pepper. Heat a large skillet over medium heat and add the olive oil. Once heated, place salmon fillets skin side down and gently press them down with your tongs or spatula so they don't curl up
Once you see the salmon is cooked halfway up on the sides (~ 4-5 minutes), gently flip them over with a spatula and cook the other side for 2 minutes
Gently flip the fillets over again, skin side down, reduce the heat to low and pour over the honey garlic sauce - be careful as the sauce can spit out a little and will be bubbling
Keep basting the salmon with the sauce for about 2 minutes then remove the salmon fillets from the skillet onto a plate
Cook down the sauce for 2-4 minutes until its reduced and thickened up slightly, then remove the sauce to a small bowl or ramekin
Garnish your delicious Honey Garlic Salmon with a drizzle of the remaining sauce alongside your favorite sides, here I've made jasmine rice and an avocado salad and enjoy!

Notes
Salmon - for the best sear on the salmon, ensure you have a hot pan and don't touch them once they've been placed down, only flipping once you can see the sides have changed color (about half way up the fillets)
Honey garlic sauce - be careful when pouring the sauce in the pan. It will be sizzling and bubbling and can spit out, so reduce the heat to low beforehand. Then with a spoon keep basting the salmon in the sauce for the best flavor
Sauce consistency - watch it closely as it can thicken quickly if overcooked, due to the sugar in the honey. It should be reduced down to a glossy sauce thats runny enough to drizzle
