Slice the watermelon into cubes and place them in a large salad platter or deep salad bowl
Thinly slice the cucumber into thin half moon shapes and cut the feta cheese into small cubes, then add them to the salad bowl
Sprinkle over the chopped walnuts and roughly tear over the mint leaves - I like to leave the smaller mint leaves whole
Make the dressing in a glass mason jar or ramekin, by adding olive oil, zest of the lime using a microplane grater then squeeze in the juice, and a good pinch of salt. Stir to combine
