Ingredients

  • ½ cup rolled oats
  • ½ banana
  • ½ cup almond milk
  • 1 tablespoon maple syrup
  • 1 teaspoon chia seeds
  • ½ teaspoon baking powder
  • Pinch of sea salt
  • 1 square dark chocolate - 10g
  • 1 tablespoon Cacao nibs
  • Melted coconut oil or cooking oil spray

Instructions

  • Blend the oats in a high-speed blender to create oat flour
  • Add the milk, banana, maple syrup, baking powder and salt into the blender and blend for 10-20 seconds until well combined. It should be a thick runny cake batter-like consistency
  • Grease a small ramekin by brushing melted coconut oil or cooking spray, making sure to coat the bottom and all the sides
  • Pour the batter into the ramekin and gently tap it on the kitchen benchtop to flatten the top
  • Break the dark chocolate square into 4 pieces and place them into the centre of the ramekin. With your fingers, press them down slightly into the mixture so they are submerged
  • Sprinkle the cacao nibs on the top and place in the microwave to cook for 2 minutes. (You can also bake in the oven at 180C/360F for 20 mins)
  • Remove and check if it's cooked all the way through by sticking a toothpick into the centre. It should come out mostly clean
  • Let it cool for a few minutes then garnish by adding a drizzle of maple syrup, then dig in!
