4tablespoonswhite wine vinegar or 1 whole lemon juiced
1bunchfresh parsley - finely chopped
Salt and black pepper to taste

Instructions
Cook pasta in salted boiling water until al dente (make sure not to overcook the pasta)
While the pasta is cooking, add the Italian salad dressing ingredients to a large salad bowl and whisk together
Chop the cucumber, cherry tomatoes, olives and artichokes into bite sized pieces
When the pasta is finished cooking, drain and let it cool down slightly. Add the pasta straight into the serving bowl and mix into the dressing while it's still warm
Once it has cooled down, add the chopped vegetables, the chickpeas and arugula leaves and toss together. Top with grated parmesan cheese and serve up your Italian Pasta Salad and enjoy!
