This Italian Chopped Salad is a flavor bomb in every bite! With fresh crunchy veggies, marinated artichokes, mozzarella and parmesan cheese, with a delicious homemade Italian dressing bringing it together. Great for gatherings and meal prep too
Cut the romaine into bite sized pieces, cut the cucumbers into half circles, chop tomatoes into halves and thinly slice the red onion. *Optional soak the onion in water while prepping the rest to mellow its flavor
Add the fresh veggies into a large salad bowl. Thinly slice the sun dried tomatoes and artichokes, chop the mozzarella balls into halves and grate in the parmesan cheese. Add everything to the bowl
Add the dressing ingredients to a jar or glass and whisk together
When ready to serve, pour over the dressing, give it a good toss and taste for seasoning. Serve up and enjoy your Italian Chopped Salad!
