Wash and slice the sweet potatoes into thin circles, approximately the same thickness. I find it easier to use a mandolin but you can also use a sharp knife
Place sweet potatoes in a large bowl, add olive oil, thyme leaves, grate in garlic and finely grate parmesan cheese. Mix well together using your hands to make sure all potato slices are nicely coated with the seasoning mixture
Spray an oven dish with oil spray and using a handful of sweet potato slices at a time, overlap the slices so they are leaning on each other, and create a spiral pattern starting from the outside perimeter of the oven dish then moving towards the inside
Cover with tin foil and bake for 30 minutes. Then remove from the oven and increase the temperature to 210°C/410°FRemove the tin foil, lightly spray the top of the potatoes with oil spray and place back in the oven for 20 minutes
To serve, grate over some fresh parmesan cheese and pour over the ultimate meat-free gravy and enjoy your cheesy, garlicky, roasted sweet potato bake!
