This Baked Feta Pasta combines roasted feta cheese and cherry tomatoes to create a sweet, salty and creamy sauce tossed with pasta for an easy dinner everyone will love!
Preheat the oven to 400°F/200°C. Add cherry tomatoes and garlic cloves whole in their skins to an oven dishSeason with salt and pepper along with oregano and pour over the olive oil. Give it a little massage with your hands so all is nicely coated
Place the block of feta cheese in the middle of the dish and place all the tomatoes around it. Add a sprinkle more of oregano and a drizzle of olive oil to the feta before baking for 25-30 minutes (until tomatoes have blistered and feta cheese has softened)
When tomatoes have 10 minutes left on the cooking time, start to boil the pasta in heavily salted water. Ensure to save some pasta water before draining
Remove oven dish and gently peel garlic cloves (be careful it may be hot) from their skin and using a fork, mash the garlic cloves in the same dish
Give it all a mix together breaking up the feta cheese - it will become a nice and creamy sauce like consistency
Add the cooked pasta straight into the dish along with the basil leaves. I like to leave mine whole but you can also break them up with your fingersMix together, and if needed, add a splash of the pasta water to help it come together. Dig in and enjoy your Baked Feta Pasta!

Feta - bake the feta as a whole block. Crumbled or broken feta can brown too quickly and won't create the same creamy sauce
Tomatoes and garlic - leave the cherry tomatoes and garlic cloves whole. The tomatoes will naturally blister and burst, while the garlic becomes soft and creamy in its skin
Pasta - choose a short pasta shape like orecchiette, penne, fusilli or small shells to catch all of the creamy sauce. Before draining the pasta, reserve some pasta water and add a splash to loosen the sauce if it becomes too thick
