Instructions
Add the dijon marinade ingredients to a small bowl - which are the olive oil, dijon mustard, lemon juice and dill. Grate in the garlic clove with a microplane grater, add a good pinch of salt and pepper. Whisk to combine
Pat the salmon fillets dry and place them skin side down on a baking dish lined with parchment paperSpoon the dijon marinade over the fillets and spread it out evenly. Allow it to marinate for at least 15 minutes (if wishing to marinate longer, place covered in the fridge)
Preheat the oven to broiler setting at 480℉/250℃ If you are adding asparagus or other veggies on the side of the tray add them now with a drizzle of olive oil and seasoning
Place the tray in the middle of the oven and bake the salmon for 10-12 minutes (or 9 minutes if you prefer it pink)Serve up your delicious Dijon Salmon alongside rice, quinoa, veggies or a salad and enjoy with lemon wedges
